Lentil Soup



Peasant food? Maybe. But please don't tell me you can't feed a family a wholesome, nourishing and filling meal without spending big bucks. I've got about $3.50 in this pot. And it'll feed at least 8 VERY generously. Real food is possible on a budget. Oh, and it takes about half an hour from start to finish. Heck yeah!

1 onion, diced
3 large carrots, diced
2 ribs celery, diced
3 cloves garlic, minced
1 lb lentils
1 12 oz can tomatoes with green chiles
1 15 oz can diced tomatoes

Put veggies in stock pot with about 2-3 tbls cooking oil or butter. Cook until just tender. Toss in lentils and stir about. Pour in 6 cups water. Bring up to a simmer and put the lid on. Let it go for about 20 minutes. Check for tenderness. If not done, put lid back on and check every five minutes or so. If lentils are tender, stir in canned tomato products. Let heat through and serve.

If you're feeling really fancy, you can top it with a dollop of sour cream and some freshly mined parsley or cilantro from your garden.
