Meal-in-a-Bowl Salsa

Ellaberry Gardens' Meal-in-a-Bowl Salsa

3-4 cups chopped tomatoes  (we just use whatever is ripe that day)
1/2 c chopped onion
1 jalapeno, diced really small
2 cloves garlic, diced or minced (optional)
1/2 c cilantro, chopped (we really like cilantro, so if you don't, you can use less)
1 can black beans, drained and rinsed (or about 2 cups cooked dried beans)
kernels from two ears of corn (just slice 'em off and throw them in the bowl...cooked or raw)
dash of salt

Mix all and let sit for about half an hour to let flavors mix!  Serve with tortilla chips and/or corn tortillas. If you happen to have some leftovers, this lasts in the refrigerator for several days (I'm assuming...it typically doesn't even make it an entire day around here.)

My husband would like me to point out that this is especially tasty with a few cubes of Swan's cheddar cheese from Claremore, OK.
