Lamb's Quarters Dip

Lamb's quarters are an extremely healthy and nutrient-packed wild green.  You can use them in any way you'd use spinach!  This recipe is a wonderful way to get some of this green in even the pickiest eaters!  It can easily be doubled.  I haven't made it any bigger than that so do so at your own risk (the biggest risk I can think of is polishing off an enormous amount of this in one sitting!)
 
This recipe works well for poke as well.  I've even used half lamb's quarters and half poke.  Just make sure you know what you're doing if you're going to include poke...don't want any unnecessary tummy aches. It's very delicious with the combination of greens though!
 
Ellaberry Gardens’ Lamb’s Quarters Dip
 
4 oz. lamb’s quarters, leaves and stems
½ c. sour cream
1/3 c. real mayonnaise
¼ tsp lemon juice
¼ c. onion, minced
1 tsp. garlic or regular chives
½ tsp dried parsley (or 1 tsp fresh)
¼ tsp paprika and onion powder
dash salt and pepper


Rinse off your lamb’s quarters.  Then dip in boiling water for 2-3 minutes.  Immediately run under cool water.  Squeeze out excess water.  Put in bowl and chop with scissors.  Mix rest of ingredients in another bowl and then mix in into the lamb’s quarters.  Chill.  Serve with carrot sticks, cucumber slices or crackers.  So yummy!
